In the Top End, we don't just have "Summer"—we have the Build-Up. It’s that sticky, humid time of year around September and October when the air feels heavy, and the temperature starts climbing towards 35°C.
We know it's uncomfortable for you in the kitchen, but for your refrigeration equipment, it can be deadly.
As we head out of the Dry Season, now is the critical time to prep your equipment. If your cool room is struggling now, it will fail when the real heat hits in November.
Here is your cool room maintenance Darwin survival guide to stop a breakdown before it happens.
One of the biggest reasons we see fridge breakdown prevention fail in Darwin is the equipment rating.
Many commercial fridges sold online are rated for an "Ambient Temperature of 30°C." That is fine for a cafe in Melbourne. But in a busy commercial kitchen in Darwin, the ambient temperature can easily hit 40°C or 45°C during service.
If your fridge is rated for 30°C and your kitchen is 40°C, the compressor has to run 100% of the time just to survive. It never cycles off to rest. Eventually, it overheats and burns out—usually on a Friday night with a full load of stock.
The Lesson: You need Top End refrigeration maintenance that accounts for our extreme climate. You can't just set it and forget it.
You can do these checks yourself in about 15 minutes. Doing this now could save you thousands in lost stock later.
1. Clean the "Lungs" (Condenser Coils)
The condenser is the radiator-looking part of your fridge unit. It needs to breathe to release heat.
The Issue: During the Dry Season, dust and flour build up on the fins. This acts like a winter coat, trapping the heat inside.
The Fix: Use a soft brush or a vacuum to gently remove the dust. Do this before the daily temp hits 35°C. If the unit can't breathe, it can't cool.
2. The "Torch Test" for Door Seals
Humidity is the enemy. If warm, wet air leaks into your cool room, your evaporator will ice up.
The Test: Step inside your cool room and have someone close the door. Turn the lights off.
The Check: Look around the door frame. Can you see light coming through? If you see light, heat is getting in.
The Fix: Call us to replace those seals immediately. It’s a cheap repair that saves the compressor from overworking.
3. Clear the Airflow
We know storage space is tight, but stacking boxes right up against the internal fan is a recipe for disaster.
The Rule: Leave at least 30cm of clear space around the internal fans. The air needs to circulate to cool the stock evenly.
The worst time to fix a cool room is when the alarm is already ringing and your stock is melting.
If your system is making more noise than usual, or if it's struggling to hold temperature during the lunch rush, it is shouting for help. A preventative service now is much cheaper than an emergency call-out fee on a Sunday.
